On the third clip it was pretty stiff. Bilstein rides rough/stiff for my liking. I didn't had 5100 but my buddy did so that was my experience riding in his vehicle. I went from the stock which feels like 5100 to the 2nd gen Pro Bilstein which is a non-adjustable 6112/5160 that gave 1.75" lift. It was still too rough for my liking.

The last application I put these on was a '05 4runner with high mileage and very "broke-in" springs. I only got an inch out of the 5100 shocks in the rear. I'm finding that is the norm for worn out springs. If you are looking for a full 2 inches, you may want to get new springs as well. Bilstein will probably offer springs for your application.
